  • TOJI

    杜氏

    The master brewer. The toji leads the kurabito and oversees every step from raw materials to pressing, storage and maturation. Guilds carry regional names — Nanbu, Echigo, Tanba and others.

    The person who designs and brews beer from malt, hops and yeast.

    The person who distills the mash, drawing out spirit and aroma.

    ブレンダー

    The person who assembles matured spirits into a single expression.
